About Me
My philosophy on food and longevity was hard-earned. During my college running career, I battled Relative Energy Deficiency in Sport (REDs), a condition resulting from a chronic caloric deficit and a dietary hyper-fixation on low-calorie, high-volume foods. I detail this experience in my post, My Experience With Relative Energy Deficiency in Sport, exploring how my well-intentioned health consciousness eventually led to persistent fatigue, a suppressed metabolism, and injury. Overcoming REDs required me to find true body weight homeostasis and taught me a vital lesson: discipline and healthy eating are well worth pursuing, but they must stay in proportion to the rest of your life. When a dietary value becomes an obsessive focus, it stops serving you and starts running the show.
Armed with a degree in Business Administration and a renewed, balanced approach to wellness, I created Produce Planty to share meals that actively support your body. Here, you will find recipe creativity that prioritizes gut health, optimal fiber intake, and sustainable energy, in meals that are vibrant and satisfying. Whether I am developing a new breakfast bread in the kitchen, hitting the San Diego trails for a hike, or analyzing the latest in nutrition science, my goal is to help you build a joyous, sustainable approach to eating.
The name Produce Planty is a deliberate play on words: a space dedicated to producing creative meals, while celebrating a lifestyle featuring plenty of plants.
I am Jake Richardson, a San Diego-based recipe creator, runner, and former NCAA Division I Cross Country and Track athlete at Cal Poly San Luis Obispo. My cooking grew out of a deep interest in nutrition science. I utilize my passion for cooking and baking as a primary tool to manage my health, ingredient quality, and athletic performance.
