  • 1 tbsp canola or olive oil

  • ½ tsp smoked paprika

  • ¼ tsp cinnamon

  • ¼ tsp salt

  • ¼ tsp black pepper

Barley

  • 1 cup pearl barley, rinsed

  • 3 cups vegetable broth or water

  • ½ tsp salt, if using water

  • 1 tbsp lemon juice

  • 1 tbsp nutritional yeast

  • ¼ tsp black pepper

  • Optional: ¼ tsp smoked paprika

Sautéed Kale

  • 6 cups chopped kale, stems removed

  • 1 tsp canola or olive oil

  • 2 cloves garlic, minced

  • ¼ tsp salt

  • 1–2 tsp lemon juice or balsamic vinegar

  • 1–2 tbsp water, as needed

Smoky Tahini-Ketchup Sauce

  • ½ cup ketchup

  • ¼ cup tahini

  • 2 tbsp soy sauce

  • 1 tbsp Dijon mustard

  • 1 tbsp balsamic vinegar

  • 1 tbsp maple syrup

  • 2 tbsp nutritional yeast

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp chili powder

  • 1–3 tbsp water, to thin

Fresh Toppings

  • 1½ cups cherry tomatoes, halved

  • 1 large avocado, diced

  • Freshly ground black pepper

  • Lemon wedges, optional

Instructions

1. Prepare the tofu

Cut the tofu into roughly ¾–1-inch cubes.

For the best seasoning and texture, boil the cubed tofu first:

  1. Bring a pot of lightly salted water to a simmer.

  2. Add the tofu cubes and simmer for 5 minutes.

  3. Drain thoroughly and let the tofu steam-dry for several minutes. Pat gently with a clean towel if necessary.

Transfer the tofu to a bowl.

Add the oil, garlic powder, smoked paprika, black pepper, salt, and nutritional yeast. Toss gently until evenly coated.

Add the cornstarch last and toss again until the tofu has a thin, even coating.

2. Start the barley

While the tofu is draining:

  1. Add the rinsed barley and vegetable broth to a saucepan.

  2. Bring to a boil.

  3. Reduce to a simmer, cover, and cook according to the barley package directions, usually 25–35 minutes, until tender but still pleasantly chewy.

  4. Drain any excess liquid if necessary.

While warm, stir in the lemon juice, nutritional yeast, black pepper, and optional smoked paprika.

Set aside covered.

3. Prepare the sweet potato and tofu

Preheat the oven to 400°F.

Place the sweet potato cubes on one side of a large baking sheet.

Toss them with the oil, smoked paprika, cinnamon, salt, and black pepper.

Spread them into a single layer.

Place the seasoned tofu on the other side of the baking sheet, leaving some space between the cubes.

Bake at 400°F for 30 minutes, flipping the tofu and turning the sweet potatoes after 15 minutes.

The tofu should be golden and crisp around the edges, while the sweet potato should be tender inside and browned around the edges.

Tip: If the tofu needs additional browning, give it another 5 minutes at the end.

4. Make the smoky tahini-ketchup sauce

While everything cooks, whisk together:

  • ketchup

  • tahini

  • soy sauce

  • Dijon mustard

  • balsamic vinegar

  • maple syrup

  • nutritional yeast

  • smoked paprika

  • garlic powder

  • onion powder

  • chili powder

Add 1 tablespoon of water and whisk.

Continue adding water, 1 tablespoon at a time, until the sauce reaches a thick but drizzleable consistency.

Taste and adjust if needed.

  • More balsamic → more tang

  • More maple → sweeter

  • More chili powder → more heat

  • More water → thinner drizzle

  • More tahini → richer/creamier

5. Sauté the kale

Heat the oil in a large skillet over medium heat.

Add the minced garlic and cook for about 30 seconds.

Add the chopped kale and salt.

Sauté for 3–5 minutes, stirring frequently, until the kale is wilted but still has some texture.

If it seems dry, add 1–2 tablespoons of water.

Turn off the heat and finish with 1–2 teaspoons lemon juice or balsamic vinegar.

6. Assemble the bowls

Divide the barley among four bowls.

Arrange the following over each bowl:

  • Sautéed kale

  • Roasted sweet potato

  • Crispy smoky tofu

  • Cherry tomatoes

  • Diced avocado

Drizzle generously with the smoky tahini-ketchup sauce.

Finish with freshly ground black pepper and, if desired, a squeeze of fresh lemon juice.

Suggested Bowl Ratio

For each serving, aim for approximately:

¼ of the barley + ¼ of the tofu + ¼ of the sweet potato + 1½ cups kale + ⅜ cup tomatoes + ¼ avocado + sauce

The result should have a good balance of chewy, crispy, creamy, sweet, smoky, acidic, savory, and slightly spicy elements rather than letting any one ingredient dominate.

Optional finishing touches

  • Toasted sesame seeds

  • Chopped green onion

  • Fresh cilantro

  • Extra chili powder

  • Lemon zest

  • A sprinkle of nutritional yeast
